Pineapple Salsa


Ingredients:
1 fresh pineapple diced or 2 cans pineapple chunks
1 small green jalapeno
1 red bell pepper cored seeded
½ red onion
1 lime,halved and squeezed
1 sprig fresh cilantro, minced
¼ tsp red pepper flakes

Directions:

Mince red pepper, red onion and jalapeño.

Sweat together over medium heat in a sauté pan with lime juice until red peppers become sweet and slightly softened.

Remove from heat and stir in your pineapple chunks and cilantro.

Refrigerate until serving (at least 3hours).
