2 cups flour

Ingredients:
½ tbsp olive oil
¼ cup diced green peppers
¼ cup spinach or tomatoes
1 tbsp diced onion

Directions:
Heat oil in a skillet over medium heat and sauté your vegetables until softened. Stir in your eggs and scramble until set. Sprinkle with a dash of salt and pepper. Slide onto plate and serve with a slice of wheat toast, fresh fruit and a glass of skim milk.
